Khao soi or khao soy is a noodle dish served in northern Thailand. The name means "cut rice". Traditionally the dough for the rice noodles is spread out on a cloth stretched over boiling water. After steaming the large sheet, the noodles are then rolled and cut with scissors. Essentially Khao soi is a soupy dish made with a mix of deep-fried crispy egg noodles and boiled egg noodles, pickled cabbage, shallots, lime, ground chillies and usually a chicken leg in a coconut curry sauce. It is very popular as a street dish eaten in northern Thailand, though not often served in Thai restaurants abroad. Khao soi also features in the cuisine of the Shan people who primarily live in Burma.
